  • Olive oil (1 tablespoon)
  • Eggs (4 large, whisked)
  • Cooked brown rice (2 cups)
  • Spinach (2 cups)
  • Cherry tomatoes (1 cup, halved)
  • Onions (1/2 cup, finely chopped)
  • Garlic powder (1 teaspoon)
  • Zucchini (1 medium piece, cut into thin fries)
  • Low-sodium soy sauce (1 tablespoon, optional)
  • Lemon (1/2 piece, sliced into wedges)
  • Salt and black pepper to taste
  1. Drizzle your olive oil into a nonstick pan and let it warm up. Once it’s shimmering, toss in your chopped onions and let them soften. You’ll know they’re ready when they smell amazing and start looking slightly golden.
