Makes approximately 24 mini wontons

Ingredients

  • 24 wonton wrappers
  • 2 Tbsp olive oil
  • 24 medium shrimp peeled and deveined
  • 1/2 tsp salt
  • 1 teaspoon chili powder
  • 2 limes juiced
  • Non-Stick Cooking Spray
  • 1/2 c. guacamole
  • 1/2 c. pico de gallo
  • 2 Tbsp chopped chives

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C).
  2. Prepare the wonton wrappers: Lightly spray wonton wrappers with non-stick cooking spray. Place them in 24 mini muffin cups.
  3. Bake the wonton cups: Put the muffin tin in the preheated oven and bake for 5-7 minutes, or until the edges of the wonton wrappers start to brown. Remove from the oven.
  4. Prepare the shrimp: While the wontons are baking, toss the shrimp with 1 tablespoon of olive oil, salt, lime juice, and chili powder.
  5. Cook the shrimp: Heat a skillet over medium heat. Cook the shrimp for about 5-7 minutes, or until they are opaque throughout, flipping as needed.
  6. Assemble the wontons: Once the wonton cups are done baking, fill each one with a spoonful of guacamole, followed by pico de gallo, and top with one shrimp.
  7. Garnish: Sprinkle chives on top of each shrimp.
  8. Serve and enjoy: Serve immediately and enjoy!

These make a great appetizer or snack!
