Ingredients

  • 6 apples
  • 2 cusp old fashioned oats
  • 1.5 cups skim milk
  • 1.5 cups water
  • 2 cups egg whites
  • 1 tsp stevia
  • 1 tsp cinnamon
  • 1 Tbsp butter
  • 1/4 cup pecans (chopped)
  • 1 Tbsp maple syrup

Instructions

  1. Preheat the oven: Preheat your oven to 400°F.
  2. Prepare the apples: Cut the tops off the apples, core them, and scoop out the remaining insides.
  3. Place apples in baking dish: Put the hollowed-out apples in a baking dish.
  4. Melt butter: Melt the butter in a small microwave-safe dish and set it aside.
  5. Prepare cinnamon and stevia mixture: Combine stevia and cinnamon in a separate dish and set it aside.
  6. Cook oats: While the oven heats, add water and milk to a medium saucepan and bring to a boil. Add the oats and apple insides, then reduce to a simmer until the oats have absorbed all the liquid.
  7. Add egg whites: Turn the heat to low, then add the egg whites to the pot. Whisk continuously for 1-2 minutes.
  8. Stuff apples: Brush the apples with the melted butter, then sprinkle them evenly with the cinnamon-stevia mixture. Fill the apples with the oatmeal mixture.
  9. Bake: Bake the apples for 35 minutes.
  10. Finish and serve: Remove from the oven, top with pecans, drizzle with maple syrup, and enjoy!
