INGREDIENTS
- Sesame oil (2 tablespoons)
- Zucchini (4 medium pieces, sliced into noodles)
- Carrots (2 pieces, sliced)
- Bell pepper (1 piece, sliced)
- Red onion (1 piece, diced)
- Skinless chicken breast (1 pound, chopped)
- Garlic (3 cloves, minced)
- Ginger (1 knob, peeled and minced)
- Soy sauce (2 1/2 tablespoons)
- Oyster sauce (5 tablespoons)
- Chili flakes (1/2 teaspoon)
- Scallions (1/4 cup)
- Chicken broth or water (1/2 cup)
- Lime juice (2 tablespoons)
- Lime wedge (optional)
- Sesame seeds (2 teaspoons)
- Salt and ground pepper
STEP-BY-STEP INSTRUCTIONS
- Cut each end of the zucchini. Using a spiralizer or a mandoline, turn the zucchini into noodles, rinse, and pat them dry. Spread noodles on a baking sheet, sprinkle with salt, and let sit for 10 minutes to remove excess moisture. Pat them dry again with paper towels and set aside.
- In a mixing bowl, combine chicken, 2 tablespoons of oyster sauce, lime juice, and black pepper until everything is mixed. Let the chicken marinate for 15 minutes or overnight.
- For the sauce, mix soy sauce, remaining oyster sauce, chicken broth, and chili flakes (if you prefer) in a small bowl and set it aside.
- Heat 2 tablespoons of sesame oil in a skillet over medium heat. Add the marinated chicken and cook until the chicken is cooked through.
- Remove the chicken from the skillet and set aside. Using the same skillet, add garlic, ginger, and scallions, stirring until aromatic. Then, add the carrots, bell pepper, and red onions. Cook for 3-4 minutes until the vegetables are slightly tender.
