- 2 cups of oatmeal
- 1 tsp of baking powder
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 2 apples peeled and diced
- 2 eggs
- 2 cups of milk of your choice
- 1/2 tsp vanilla extract
- 2 tbsp melted oil (coconut oil or vegan butter)
- 2 tbsp of maple syrup
- 1/2 cup dried cranberries
- 1/2 cup nuts (pecans, walnuts)
Preheat oven to 325° and grease a 2-quart casserole dish. Set aside.
In a medium bowl combine eggs, milk, vanilla, melted oil, and maple syrup.
In another bowl, combine oats, baking powder, brown sugar, cinnamon, and salt. Add to milk mixture with diced apples, nuts, and cranberries. Stir until combined well.
Transfer to a greased baking dish and bake for about 45-50 minutes until set and golden brown on top.
