- 4 cups spinach, chopped
- 1 can refried beans, 15.9 oz
- 1 can chicken, breast meat, 12.5 oz, drained****Optional
- 1 ¼ cup shredded cheddar cheese
- 5 tortillas, 10 inches, 100% whole grain
In a large bowl combine all ingredients except for the tortillas.
Spread the mixture in equal amounts over each tortilla and fold in half.
Heat a skillet on medium – medium-high heat. If needed, use oil or spray to keep from sticking.
Heat for 1-2 minutes per side, or until toasted, and flip to cook the other side. When done, remove from heat, top with salsa, and enjoy!
