Ingredients

  • 4 TB (1/2 stick) butter
  • 1 white onion, diced
  • 2 cloves minced garlic
  • 1 cup flour
  • 4 cups chicken bone broth
  • 2 cups skim milk
  • 4 cups chopped broccoli
  • 2 cups shredded carrots
  • 2 cups low fat cheddar cheese
  • Salt, pepper, garlic powder to taste
  • Pinch of cayenne (optional)

Directions

Step 1:

Finely chop onions and broccoli, mince garlic, and shred carrots.

Step 2:

Melt butter in a large pot over medium high heat.  Add onions and garlic, cook until soft and fragrant. Add flour and mix together until well combined. Add bone broth and milk and bring to a simmer. Stir in broccoli and carrots, then cover and simmer for 10 mins.

Step 3:

Add cheddar cheese and spices to pot. Stir until cheese is melted.

Step 4:

Taste and adjust seasonings as needed.  Serve and enjoy!

Chef’s Note:

Double the recipe and freeze half, or enjoy for additional meals. 

Try substituting other vegetables for the broccoli, such as cauliflower, for more variety.
