Ingredients
- 2 cups of oatmeal
- 1 tsp of baking powder
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 2 apples peeled and diced
- 2 eggs
- 2 cups of milk of your choice
- 1/2 tsp vanilla extract
- 2 tbsp melted oil (coconut oil or vegan butter)
- 2 tbsp of maple syrup
- 1/2 cup dried cranberries
- 1/2 cup nuts (pecans, walnuts)
Instructions
- Preheat the oven: Preheat your oven to 325°F and grease a 2-quart casserole dish. Set aside.
- Mix wet ingredients: In a medium bowl, combine the eggs, milk, vanilla, melted oil, and maple syrup.
- Mix dry ingredients: In another bowl, combine the oats, baking powder, brown sugar, cinnamon, and salt.
- Combine wet and dry ingredients: Add the dry ingredients to the milk mixture. Stir in the diced apples, nuts, and cranberries. Mix until well combined.
- Transfer and bake: Transfer the mixture to the greased casserole dish and bake for 45-50 minutes, or until set and golden brown on top.
