Ingredients

  • 2 cups of oatmeal
  • 1 tsp of baking powder
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 2 apples peeled and diced
  • 2 eggs
  • 2 cups of milk of your choice
  • 1/2 tsp vanilla extract
  • 2 tbsp melted oil (coconut oil or vegan butter)
  • 2 tbsp of maple syrup
  • 1/2 cup dried cranberries
  • 1/2 cup nuts (pecans, walnuts)

Instructions

  1. Preheat the oven: Preheat your oven to 325°F and grease a 2-quart casserole dish. Set aside.
  2. Mix wet ingredients: In a medium bowl, combine the eggs, milk, vanilla, melted oil, and maple syrup.
  3. Mix dry ingredients: In another bowl, combine the oats, baking powder, brown sugar, cinnamon, and salt.
  4. Combine wet and dry ingredients: Add the dry ingredients to the milk mixture. Stir in the diced apples, nuts, and cranberries. Mix until well combined.
  5. Transfer and bake: Transfer the mixture to the greased casserole dish and bake for 45-50 minutes, or until set and golden brown on top.
