Ingredients
- 1 box spice cake mix
- 1, 15 ounces can pumpkin, unsalted
- 4 egg whites
Instructions
- Preheat the oven: Preheat your oven to 350°F and grease your cookie sheets.
- Separate the eggs: Separate 4 egg whites from the yolks. Beat the egg whites with a fork in a bowl until they are foamy (around 45 seconds).
- Combine egg whites and pumpkin: In a large bowl, whisk together the foamed egg whites and pumpkin until fully blended.
- Add cake mix: Slowly whisk in the spice cake mix, adding small amounts at a time to ensure the mixture is well blended.
- Scoop the batter: Using a 2 tbsp measure or a 1/8 cup scoop, scoop out the batter and place it onto the greased cookie sheets.
- Bake: Bake for 18-20 minutes. Let the muffies cool for 5 minutes on the sheets before transferring them to a wire rack to cool completely.
